Haldi doodh — warm milk with turmeric — is the golden, comforting drink that so many of us grew up with. Here is how to make it smooth, fragrant and lump-free.
Ingredients (serves 2)
- 2 cups milk
- ½ tsp Vasuratna Turmeric Powder
- A pinch of black pepper and a pinch of cardamom powder
- Jaggery, honey or sugar to taste
Method
- Whisk the turmeric into a few spoonfuls of cold milk to make a smooth paste.
- Warm the rest of the milk in a saucepan. Whisk in the paste, pepper and cardamom.
- Simmer gently for 3–4 minutes, stirring, until fragrant. Do not let it boil over.
- Take off the heat, sweeten to taste, and serve warm.
Variations
Add a thin slice of fresh ginger or a small piece of cinnamon while simmering, or use almond milk for a lighter version. A strand or two of saffron makes it feel festive.
